(percussive music) – [Narrator] Vinegar is one of the oldest fermented foods in the world, but these days it seems to
be having a bit of a moment. In the town of Kagoshima in Japan, you will find a special dark vinegar that has long been ahead of the times. – [Announcer] This Great
Big Story is inspired by Genesis. (lyrical music) (speaks in a foreign language) – [Narrator] Tadaaki
is the brewmaster here at the Sakamoto Jouzu Brewery. (speaks in a foreign language) (bouncy music) The vinegar ferments in
special vases called tsubos for over a year. (speaks in a foreign language) This aging process is
what separates kurozu from other vinegars. The longer the vinegar ferments the darker it will become, and the smoother it will taste. (speaks in a foreign language) In Kagoshima you can also
find vinegar smoothies, (speaks in a foreign language) soups, drinks, sauces, people can’t seem to get enough of it. (quiet music) Tadaaki has been a brewmaster

Vinegar is a little too funky for my sensitive nose. I can only have it if it’s heavily diluted. I don’t even like salad dressing because of the vinegar smell.

Interesting! I make 7-13 gallons of grape vinegar each year for the family and am very much into fermenting things, but rice vinegar is something I still haven't tried due to unclear instructions.

What seems different from all the recipes I was able to find, the vinegar in the video is made from raw (unboiled) steamed rice which is submerged in boiling-hot sweet malt solution.

Any vinegar makers here who could help clarify this and maybe help out with the recipe for home use?

tried this vinegar before, not as flavor full and rounded like the more traditional Chinese black vinegar from Shanxi province which is where Tadaaki Kuramatosan's black vinegar originates from. where instead of water dispenser they have black vinegar dispenser in the school cafeteria. but you need to make sure you get the Chinese GI version labeled stander GB/T 19777 because just like balsamic and parmesan, the GI labeled version is always better in terms of flavor.

If you want to try it and you happen to be in Singapore, you can find it at Liangcourt/Mediya. They give samples. There are other branches in US, Taiwan, Bangkok and Hongkong. I have it on a daily basis.

I've tried it,and the vinegar itself is slightly sweet! They also make jams and salad dressings with it, and it's great with desserts! Not all kurozu is black, some are apple flavored.

We have black vinegar here the philippines too but mostly native in the northern part. It smells stronger in a good way, almost fragrant and tastier too. We ferment sugar cane and put a specific kind of dried leaves that makes it darker.

This old or aged vinegar is not uniquely Japanese. It practice in most eastern Asian countries. Chinese called it 陳醋。

It is much expensive than ordinary vinegar, yes it does taste "smoother" and said to have certain "benefits" which has no actual scientific proof

Oh well, marketing gimmick I guess.

It is similar to traditional Indian vinegar…which is dark in colour and may be made from sugarcane juice or raw mango pulp or black plum (jamun). It too is aged…older the better.
