Hello! Hi, Dear Friends Again I have started sharing with you, the news here in India Manchester Series has finished and I’m back home again After coming back home, I have rearranged my kitchen again I’ve showed you many of the things I possess, but it doesn’t includes those I purchased this time Still there are many things which we need for Baking and all What’s coming up next is… Just like the way we celebrated Onam Series, I’m going to start off a Christmas Series So this is something like an official launch of that Hereby I’m announcing it officially We are going to commence our Christmas Series For me, Christmas is something closer to my heart compared to Onam We usually celebrate Onam by traditional way with things like Sadya May be because of the specialties of the month of December, I’m very much attached to Christmas I am very fond of the month of December in general The climate is very cool unlike the rest of the time If we go out to the city, it will be filled with lights and illuminations It might be done by the Government but still we can see that all around the roads If we go to shops and other institutions, we can see starts tied here and there That beautiful sight of numerous stars twinkling all around The chilly weather along with snow together makes it special, though there is no snowfall here Christmas gives us a light and soft offbeat feeling for us That feeling we get on seeing the stars tied in houses in the evening time During time before Christmas, we can see children dressed up as Santa coming to every houses Ringing bells and singing ‘Jingle Bells…’, I have a lot of memories of those During our childhood days when we stay with our parents, we really love to see these scenes Listening to the song ‘Jingle Bells’…. I have a lot of fond memories about Christmas Telling about the Christmas dishes, the first thing that comes into our mind is Christmas Cake Isn’t it? Those Christmas cakes made of plums with white royal icing on top Also we can see a lot of Cribs nowadays In roadsides, we can see a lot of vendors selling cribs The specialty here is that our next door neighbours, Siny and her family are Christians They are Knanayas (an endogamous group within Christianity) During the time their mother was alive… She is no more and we also used to call her ‘Mummy’ Both Mummy and Pappa are no more During these Christmas time, we cherish the memories with them They prepare and deliver us breakfast for Christmas days throughout all these years Mummy used to send fine Paalappam and Stew for us Actually, Mummy used to prepare Vellayappam more than Paalappam That kind of Appam without lace In addition to that Chicken Stew, Halwa and a lot more delicacies A sumptuous breakfast all-together We were so young back then We all used to wait for the breakfast delivered by Mummy on Christmas days I don’t think Siny will remember these events as she was not even born back then We have been living here since very long time and Siny came here later only I’ve a lot of fond memories like this I used to go to church for Midnight Mass along with Siny’s husband Joy, his brothers and sisters All those were good memories My mother has worked in AG’s Office She had a lot of friends and colleagues there across all religions One among them was Eliyamma aunty She was a very close friend of my mother Eliyamma aunty used to prepare many dishes and cakes and send for us Eliyamma aunty was an expert cake maker I have memories of her making cakes My mom used to follow her way of making cakes using a pumpkin-shaped mold made of metallic clay tiles rather than Electric Owen It was a custom made one There’s one heavy lid on top of that It was baked by putting burning charcoal on bottom and top How tasty was that cake! We used to get that kind of cakes back those days Memories like this Also we used to get a lot of gifts during that time My Dad and Mon gets a lot of Christmas cakes during those days My Dad’s old students in Law Academy used to send him cakes We used to get a plenty of cakes in our home Christmas is our favourite Some people used to send homemade wines to us We have a lot of good memories about Christmas Therefore I’m trying to recreate the flavour of Christmas through those memories As a part of that, I’m starting a Christmas Series for you The most important part of it is Cake, but… There’s something which is more important Wine So let’s start with Wine There are a lot of variants of Wine We can simply make Wine with anything The traditional way of making Wine is using Grapes We can also make Wine using Pine Apple, Beetroot, Jambu, Banana etc. What’s my plan for today is to make Wine using Banana The reason is that since Bananas are inexpensive, it is affordable for everyone Anybody can buy it We can make two bottles of Wine using about 10 ‘Palayankodan’ Bananas That’ll be better, right? Not only that it is very easy but… Normal process of wine making involves fermentation period also It lasts around about 20 to 28 days But this type of Wine requires only 10 days That’s why told its so easy The prime reason I decided to make Wine first is that… It needs only 10 days So that I can teach you and you can start making Wine so early in your home You can make Wine even days before Christmas That’s the main thing You can see me in a very relaxed mood now, right? Watching the views from my terrace Now the time is half past five in the evening and there’s a chance of rain as well The condition is overcast with dark clouds and there’s high chance of rain It started drizzling a bit Still I’ve decided to proceed with an Open-air cooking It doesn’t mean the entire cooking is from here But what about doing the initial processes of wine making from this open space for a change? I am in a mood for that I haven’t let Rosy (pet dog) to come over here I have closed that small gate towards the terrace I have sweeped here and kept cleaned If she joins me here, she will make a mess of here Lets start the proceedings now and we will do the first part standing here The rest we can do later I wish to wind up before the rain comes We’ll start off What we need first? The most important thing we’ve to note while making wine is… You should not keep it in a Steel or Plastic utensil You should use… Bharani (a kind of utensil made of ceramic or porcelain)… or glass utensils, both serves well We also need a cloth to close the lid Normally, people put the cloth at top and keep it tied around BUt I will keep the cloth on top and put it like this That will be safe One of the thing we need is boiled water which got cooled We need about 2 half-a litre bottle quantity which makes a litre in total Take about 2 bottles similar to a Bisleri bottle Take two bottle quantity of it, first boiled and then cooled down I’ve took that in this utensil Then we need some yeast And Sugar too These are the main ingredients And 10 fine Palayankodan Bananas If its of this size, 10 will be enough If its of even smaller size, we may need about 15 It will be the best if we use ripen ones What’s next? Lets cut the Bananas first I’ve forgot to bring the cutting board and a utensil to store it Let me go and take it I’m back with the cutting board and utensil Also I took one more thing What’s that is… This is the Wine we’re going to make I’ve already made it, so I’ve it with me Look at this See how pleasing it looks The Wine with a clear Golden colour Do you know how tasty it is? It’s very tasty This is the Wine we’re going to make This is our Wine Let’s start making the Wine Let me sit first Take 10 ripe ‘Palayankodan’ Bananas Just cut it and add, no need to grate it No need of that Just cut it Just like the way we normally cut Since its ripen, you can notice a colour difference Actually. it’s good We need these kind of Bananas Cut it normally like this as round pieces You may further split it into two like this if you want This much will be fine No need to cut it further Don’t make it finely chopped Some people used to grind it at add, but no need of that We’re making a 10-days Wine anyway Therefore if you want to get clear Wine, just follow this way My age old knife I’ve started using these again I’ve forgot about these when I went to Manchester I’ve been using Chef Knife there Whatever it is, this knife is the best for to me I’ve to wind up before it starts to shower Otherwise, I’ve to run to the indoors If rain comes, I will take a break and come back later Its also a different experience working in this atmosphere The sky is getting a Grey colour, is very dark and overcast I love this weather, the one just before the rains I’m praying to God, not to rain now Just make me feel like its going to rain, but don’t shower Let me finish this first If the Bananas gets over ripen, its edges will gets blemished Cut away those portions The caption should be ‘Wine-making in the rains’ Okay, finished I’m going to do this in a hurry Now open the ‘Bharani’ like this Then, into it add… We have to be extremely careful that not even a single drop of water is there in any of those containers we use That’s the most important thing Now, we’ll add Sugar I’ve took 1 kg of Sugar Now into this, add cut Banana pieces Add about half portion of it Add Bananas Again pour some Sugar over it Then… Again add Bananas The most important thing to note is there should not be any water content in anything we use The Bharani should be very dry If you are a person who often makes Wine, use one Bharani exclusively for that Don’t use the same Bharani we use to store Pickles Add more Sugar now I’ve kept aside 1 cup of Sugar and added the whole of rest Now, I’m going to add Yeast into this Add 1 tsp of Yeast into this You might have understood what kind of Yeast is this I’m using Instant Yeast You can even use the normal kind of Yeast granules you get in shops Add 1 tsp of it Next, we will add Water Add 1 litre of boiled water which got cooled, which is equivalent to two bottles of Bisleri package This is 1 litre of boiled water Add it as well Fill it upto three-fourth level of the Bharani This much The thing is that once it undergoes fermentation, its level gets increased automatically Don’t worry, this will not get foamed that much Now stir it thoroughly Okay and that’s enough What we’ll do next is… Put the cloth over it I use to do like this Put cloth on top and close it with lid like this That will be fine It will keep it sealed We can keep that sealed in air-tight way You have seen the process and its very simple Nothing to do and its very simple Keep it like this for 10 more days No need to stir it Stir it on alternate days for about 5 minutes using a dry, wooden spatula and seal it again As simple as that Its very effortless I’ve kept aside a cup of Sugar whose purpose will be told later I will tell you the rest of the process after 10 days But we don’t have the time to wait for 10 days Therefore, I will tell you that process by bringing the one I’ve put before 10 days It started drizzling and its showering on me Let me move inside with my Bharani I will come back once it stops raining You’ve seen what I’ve done Some people used to tight seal the Bharani using clothes But as I’ve shown you, I put the cloth on top and close it with lid It’ll keep that tightly closed and flies or other things will not enter inside Lets remove that and see inside I’ve stirred it on alternate days It got ideally fermented and evolved into the form of a Wine What we have to do inside is… gently separate the solid particles from inside. I’m trying to remove it without mixing it well It got well mashed like this I’ve not mashed the Bananas before adding, but you may also add it like that While stirring it on alternate days, you may mash it using the wooden spatula Now lets filter this We don’t need any kind of Plastic utensils Filter this by putting a clean cloth on top It smells good The aroma of fine Wine That intoxicating scent I’ve meant 2 bottles of 500ml packaged Water Press it like this You’ll get a clear liquid Wow! I can feel that awesome scent of Wine My bigger filter is missing now, that’s why I took the smaller filter I have had a bigger filter than this with me I’ve started the preparation in the evening, but I feels like it got dark too quickly Since the condition is overcast, the light is getting vanished quickly Like this, extract every drop of Wine from it The process seems never-ending I’ll be doing the rest of the process inside the kitchen We’ve to lit up the Stove also for something Therefore we have to go inside Anu Mol is there in the downstairs I think she’s not aware if this She might join us after some time She’s not aware of our progress I’ve told her that I’m making Wine on the terrace She might join us anytime from now Hope everyone of you are waiting to meet Anu Mol You can see a cloudy, colorless semi-solid portion in the base part of the solution No need of using that We have to be careful of that while separating the liquid You’ll get a clear Wine on doing so LN: Hello! Anu Mol I’ve told you that she might join us any time soon Some of you were eagerly waiting for her and some told me that they’re missing her Anu: Hello! Anu Mol is here Anu Mol stays in the hostel now and she came here to spend the weekend Even I’m not able to meet her often She comes here only during Saturday and Sunday Anyways I’m happy We’re into the last phase of wine making process I have extracted the liquid into a container Now lets carry this inside The rest of the process is inside the kitchen Be careful! Anu Mol has carried the Wine into the kitchen But this don’t have the colour and flavour of a Wine, right? It is because of the fact that this Wine is made of Banana and its natural colour is less If we are using Grapes or Beetroot to make Wine, it gets a reddish colour But this has got a different colour I’ve told you that we have to do something in its last stage and that’s what I’m going to do LN: Here comes Vishnu and its been quite some time that you have met him Both of them have arrived Wine tasting session is yet to come What we’ve to do now is… We’ve used ¾kg of Sugar initially Now lets melt 1 cup of Sugar (about 250gm) and turn it into golden brown colour Then into it, add 1 cup of boiling water Also put 1 cup of Water to boil Okay, do both these While melting the Sugar, don’t stir it using spatula Just shake the vessel like this Once it gets melted well, stir it using a wooden spatula Vishnu: Can we make Wine this way? [in astonishment] LN: This is the way of doing it! These are home-made Wines These are sweet Wines actually The conventional Wines are made in a different way Wines have some specific fermentation period like 1 month, 28 days etc. But this is something like a rapid Wine made in 10 days How’s the idea? Anu: Superb [LN agrees] We are going to give a golden brown colour into it Only on doing this, it will be perfectly made We’ll add Sugar after caramelizing it and making it into a Sugar syrup That’s the thing We’ve made everything ready with us Three Wine glasses For three of us For Anu, Vishnu and Lekshmi Now a question will arise, whether our Cameraman gets his share Cameraman is busy shooting the scenes here He’ll also get a chance to taste this once he finish capturing and turn off his camera That’s our agenda for today Anyways, we have to keep an eye on the Sugar Let it gets melted Once it gets melted well and change to golden brown colour, we will add boiling water which minimizes the eruption Anyways there will be a kind of small whamming Still hot water will be used Vishnu is listening to this in a very serious manner Even if I’m not here, Vishnu will make Wine from now on This Wine is very easy to make Anybody can make this, even a small kid We don’t need to wait for just ten days, nothing more Stir it on alternate days, that’s all Keep the water in a low flame It starts getting melted It will take time to get boiled since the base of this vessel is very thick After that, everything can be done in quick succession It started moving See the movement as it gets melted It’s so nice Look at this, its colour got changed It turned to a golden brown colour If we keep on melting it, it will get over-burnt It should not get over-burnt This is the perfect colour Now we will add hot water The hot water is getting boiled at the other end There will be some violent eruption Since we used hot water, the level of explosion is lower Now let it come to a boil Our Caramel syrup is ready See this… It got boiled very well Its best to pour boiling water to the syrup If both of it has similar hotness, we can avoid violent sluttering If we pour cool water, it will not be like this Also the sugar gets caramelized at the moment we pour cool water If we pour cool water, it will gets hard Only after immersing in water for some time, it gets melted If we do like this, it will not gets hard It will gets blended easily Vishnu has donned the role of expert chef Its almost done Actually we don’t need to get it thickened We can boil it further for 5 minutes and allow it to cool down Once it gets cooled down, we will mix it with Wine Okay, this is it Allow it to cool down After that, we will mix the sugar caramelized syrup with the Wine Just get its thickened only a bit, not heavily The colour should change We have only put 750gms of Sugar in the Wine, so its not that much sweet Adding this will make the sweetness level perfect If you don’t need much sweetness, you may add 500gms of Sugar while making Wine Vishnu will mess up the things He will spread everything here and there doing like this LN: No, Don’t help me! LN: This much of help is enough The caramel syrup has got cooled down Now we will mix it with the Wine LN: Have you seen this, Vishnu? Actually I’m teaching this to Vishnu instead of Anu Look at Wine Making This is the colour now The colour got changed now It will get the colour of Wine We will bottle it after filtering it once more Lets filter this and fill it into bottles How’s it? Let’s do it What’s next? We’re done with this Some things we have to note are… Use clean and dry glass bottles to store Wine I’ve took a funnel, which we normally use to pour oil, to easily fill the bottle Vishnu is anxiously watching the things We’re not done yet Another thing we have to be careful is… Don’t fill the bottle till its brim Leave a gap between Because Wine has a specialty Since it gets stronger as we keep it intact, there’s a chance that it may blast off Actually, this is a bottle we get on buying Tomato sauce You can clean, dry and use any good bottle, like the ones we get on buying squash or tomato sauce Don’t close it too tight also Close it a bit loose It will be fine You can either use a Cork, but leave a small gap in between As it is kept for more days, it will get more clearer It will turn golden brown in colour and gets clearer Still its very clear Now, I’ve to attend these two anxious people Lets serve it from the bottle itself Its more aesthetically appealing Let Vishnu have a first taste of it A glass of Wine for Vishnu Vishnu: I will wait LN: Let me give it to Anu Anu: We’ll have it together This don’t have any alcohol content But if you really want, you can add an ounce of Brandy or Whiskey with this Its for those who like it Still its very tasty LN: This is for whom? Oh! its for me Let me have a small portion of this This is for celebrating Christmas Ln: How’s it? Vishnu: Very strong Its very strong with sweetness and a bit of sourness, it has got that punch Vishnu: Give me one more glass He has asked for one more glass since its very tasty We have commenced our Christmas celebrations Christmas celebration is on! We have many things like Cakes to follow I’m keeping two full bottles of Wine here It gets stronger and clearer over the period of time Its very inexpensive also In total, we only need 1 kg of Sugar, 10 Palayankodan Bananas, 1 tsp Yeast and some water Just follow this method I’ve made this early so that you too can try this in your home You have 10 days’ time and its very much enough Christmas will be on 25th December You can keep yourself ready with Wine bottles on first week of December itself You can even use the ingredients in double or triple its quantity You’ll get more number of bottles How it will be? It will be very tasty After making this, let me know your feedback You’ll like this We all are very happy

Accidentally I added the whole sugar for fermentation in jar forgetting to save 1 cup for caramelizing later..
So.. after 10 days how much sugar should I add to caramelize?
